Cuban couple make Rimbey their new home

A cool spring day in Rimbey is like a winter day in Cuba, but even though the climate has required some adjustment, Alex Suarez and Madelin Sardina love it here.

The couple moved to Rimbey recently with their 12-year-old daughter, Melissa, and they are glad they did.

“We love Canada, and Rimbey is a nice little town. The people here are very beautiful, very friendly,” said Sardina.

She and her husband moved to Rimbey as Suarez began working as chef of Henry’s, the restaurant at Best Western Rimstone Ridge Hotel.

Suarez has several years’ experience as a professional chef, working in large hotels and resorts in Cuba.

Now, he is able to bring his expertise to Rimbey and although he is used to working in much larger establishments, he finds the kitchen at Henry’s to have the latest up-to-date equipment and a pleasure to work in.

“The conditions are wonderful here,” he said.

Sardina, who worked in the tourist industry in Cuba, said she and her husband were in Canada visiting a couple of years ago and loved it. Through the help of Canadian friends they were able to secure employment.

“We saw that there were many opportunities and we wanted to come here, but it took more than a year to make it all happen. It was worth it though. There is much more opportunity here and we have received such a warm welcome. Everyone is so friendly and nice.”

Sardina and her husband have family in Cuba and admits to missing them, and recalls, somewhat wistfully that Cuba is a beautiful island with incredible beaches. However, she wants her family to visit and already feels at home in Canada.

Henry’s is open from 5 to 9:30 p.m. Tuesday to Saturday and hours will be extended when a second chef comes on board.

The couple is looking forward to meeting new people in Rimbey and Suarez invites the public to try out his delicious cuisine. He said every Saturday will be a Cuban night with waiters dressed Cuban style, Cuban music playing and Cuban drinks served.
